Vegan Challenge

Healthy Tabbouleh Bowl

Ingredients:                                                                                              

Tabbouleh:

3/4 cup uncooked sorghum or quinoa

1 cup packed fresh parsley leaves

1/2 cup packed fresh mint leaves

2 medium cloves garlic, minced

1/2 cup hemp hearts

1.5 cups diced cherry tomatoes

4 green onions, thinly sliced

sea salt & freshly ground black pepper

Tabbouleh Dressing:

1 tsp fresh lemon zest (or the juice from 1 lemon) and/or

2 tbsp fresh lemon juice

2 tbsp extra-virgin olive oil

1 tsp red wine vinegar

2 tsp pure maple syrup

Lemon Tahini Dressing:

1 large garlic clove

1/4 cup tahini

1/2 cup fresh lemon juice (3 large lemons)

3 tbsp nutitional yeast

1/3 cup extra virgin olive oil

1/2 tsp sea salt

freshly ground black pepper

Falafel Chickpeas:

14 oz can chickpeas, rinsed and drained

1 tsp coconut oil or grape-seed oil

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 ground cumin

1/2 tsp ground coriander

1/2 smoked paprika

1/2 tsp fine sea salt

Bowl Ingredients:

1 container of lemon-garlic hummus (I buy Costco brand - clean)

2 medium zucchini sliced

pita or naan bread (whole grain if possible)

olives (optional)

sesame seeds (optional)

lemon wedges (optional)

Action:​​

  • Tabbouleh:

    • Cook the sorghum or quinoa according to package directions and set aside.

    • In a food processor combine the parsley, mint and garlic. Add this mix to the sorghum, followed by the remainder of the ingredients.

    • Mix dressing ingredients together in a medium bowl, then pour evenly over tabbouleh mix.

  • Lemon Tahini Dressing:​

    • Pulse garlic in a food processor​

    • Add the remaining ingredients and mix

    • Set aside for later

  • Falafel Chickpeas​:

    • Heat the oil over medium and add the chickpeas​, stir to coat in oil

    • Add the remainder of the ingredients and cook/stir until chickpeas are heated.

  • Bowl Assembly:​

    • Grill zucchini in oven, directly on the rack, pan fry, or bbq them.​

    • In each bowl add desired amount of Tabbouleh, hummus, chickpeas, pita bread, zucchini and dressing. You can also add the optional toppings for more flavour.

    • Makes 5 servings.
