Fajita Zucchini Boats
1/2 cup prepared brown rice
1/2 cup beans (black beans or any kind)
1/4 cup finely diced bell pepper
¼ cup diced onions
1/4 cup finely diced kale
2 tbsp organic salsa or diced fresh tomatoes
Additional Protein Option: 1 cup cooked Extra Lean ground turkey or chicken
Pre-heat the oven to 400 degrees F. Slice the zucchini in half and gently scoop out the seeds, leaving about a half inch rim all the way around. Put the zucchini on a baking sheet coated with coconut or grapeseed oil, white side down. That’s how you get the nice brown edges. Lightly oil the zucchini again and sprinkle with garlic powder. Bake 15 minutes and check to peek if the rim is golden brown. If not, let bake a little longer. Meanwhile, sauté the onion, bell pepper, and kale with a small dash of cumin, oregano, and garlic. After the veggies are done, mix with the salsa or tomatoes. Protein option: Saute the ground chicken/turkey with your favourite seasoning in 1 tsp of coconut oil. Time to fill the boats! Press the mix down so it stays put. (We also added red pepperflakes for a little heat. Jalapeños are also delicious.) Put the boats back into the oven for 5 to 8 minutes until heated through. Serve over black beans and cilantro lime brown rice!
