Caesar salad has been very different for me since switching to a vegan lifestyle. It's been light, tangy and more oily than I'd like... until now! I found this recipe online and made a few changes. It's rich, creamy and full of zing!
1/2 - 1 cup vegan mayo (depending on how creamy you like it)
1 tsp dijon mustard
2 garlic cloves, minced
1-2 tbsp lemon juice, fresh
1 tbsp olive oil
1.5 tsp nutritional yeast
salt/pepper to taste
Mix all ingredients in a small bowl and whisk with a fork. Add more vegan mayo to make your dressing more creamy, or add up to a tablespoon of water to thin it out.
Makes enough dressing for 2 family sized salads or 1 party sized salad.
