Keto Kitchen: Messy Mexican Bowl Recipe!

This recipe is not only delicious but is also easy! Many of the ingredients can be added to taste!!


1 tablespoon butter

1/2 sweet onion

4 slices pre-cooked bacon

4oz leftover roasted chicken breast, cooked

3oz cheddar cheese or one of choice

half and avocado or one tablespoon guacomole

2 tablespoons tomatillo salsa

1 tablespoon sour cream

1 cup steamed cauliflower rice (I prefer frozen, fresh works)

half of a fresh lime

fresh cilantro to taste

hot sauce if desired

salt and pepper to taste


Melt a tablespoon of butter in a frying pan.

Saute half an onion in the butter on medium heat.

Take pre-cooked bacon and add it to the pan until crispy.

Take the roasted chicken, add to pan; warm for about 3 minutes stirring together with other ingredients.

In the meantime, steam cauliflower rice.

Add cheese to frying pan until melted.

Place rice into shallow bowl and add hot mixture on top of rice.

Add avocado, guacamole, sour cream, salsa, cilantro, salt, pepper as listed above.

Squeeze lime over contents of bowl.
