Sweet Potato Open Burrito
5 sliced strawberries or handful of black berries
1/2 cup sweet potatoes
1 tsp coconut oil
1 cup baby spinach
1/2 cup mushrooms (optional)
1 hard-boiled egg
2 slices of avocado
1 tbsp hummus
1 tsp hot sauce (or 2 tbsp organic salsa)
2 tbsp chopped onion spices
- Coat a non-stick frying pan with coconut oil. Sauté mushrooms and onions for 2-3 minutes. Add sweet potatoes, and a small sprinkle of cumin, oregano, and garlic for a taco flavor. Cayenne too if you want a little spice.
-Tip: Partially pre-cook cut sweet potatoes in the microwave for easier sautéing. 1-2 minutes in a bowl with a splash of water does the trick.
- Sauté a few more minutes until everything is a nice golden brown, stirring occasionally. When the veggies are almost done, add the spinach. It will quickly wilt before your eyes. When it does, you’re done!
- Slice avocado, plate with hard boiled egg, berries and a dollop of hummus.
